Better than Newk’s! This homemade chicken salad is creamy, flavorful, and perfect for sandwiches, wraps, or straight from the spoon.
Ingredients
For Chicken Marination
3 ½poundschicken breastsmall pieces or whole
1 ½teaspoonturmeric
1teaspoonred chilli pepper
1 ½teaspoongarlic powder
1teaspoonginger powder
1 ½teaspoonoregano
1 ½teaspoonsalt
5tablespoonsolivealternatively, you can use avocado oil or oil of your choice
3tablespoonsof lemon juice
For Salad
1 ½cupschopped bell peppersdifferent colors of bell peppers gives a vibrant look.
½cupalmonds
½cupwalnuts or pecans
1cupof red onionfinely chopped
2cupsof grapesblack, red, or green, up to you!
3tablespoonstarragon leavesfreshly chopped
½cupparsleyfreshly chopped
Lettuce Leaves / Arugula / Bread / Tortillaas per your choice
3tablespoonsthymefreshly chopped
For Salad Dressing
1 ½cupsmayonnaise
1cupplain yogurt or sour cream
1tablespoonbalsamic vinegar
1teaspoonsalt
3tablespoonsdill leavesfreshly chopped
3tablespoonslemon
1 ½teaspoonblack pepper
½teaspoonlemon zest

Instructions
Cook the Chicken: Marinate the chicken, then bake at 350°F for 30 minutes. Flip the chicken halfway through at the 15-minute mark. Check for doneness after 30 minutes; if needed, bake for another 10-15 minutes. Let it cool, then shred it.
Prep the Ingredients: In the meantime, the chicken bakes. Finely chop bell peppers, onions, parsley, thyme, and tarragon.
Toast the Nuts: Roast almonds and walnuts on low heat until golden brown. Let them cool.
Make the Dressing: Whisk together the dressing ingredients. Taste and adjust salt and black pepper as needed. Set aside.
Assemble the Salad: In a large bowl, mix shredded chicken, chopped veggies, toasted nuts, and grapes. Pour in the dressing and mix well.
Serve & Enjoy: On a croissant or bread as a sandwich, wrapped in a tortilla, in crisp lettuce cups, with crackers as a dip, or simply by the spoonful!
Notes
Taste the dressing before mixing it in. If needed, adjust salt, black pepper, or lemon juice to suit your taste.
