A traditional Pakistani Eid dessert - fine vermicelli toasted in ghee, cooked in a cardamom-clove sugar syrup, and finished with fried almonds, pistachios, and raisins. Fluffy, buttery, and ready in 20 minutes.

Instructions
Make the sugar syrup: In a small deep pan, combine 2 cups water, 180 g sugar, 3 cracked cardamom pods, and 3 cloves. Bring to a boil over medium heat, then reduce to low and simmer until the sugar dissolves completely. Turn off the heat and set aside — you want it hot when it goes in.
Crush the vermicelli: Without opening the packet, press and crush the vermicelli with your hands into roughly 1-inch pieces. Then open and transfer to a plate.
Fry the nuts: In a wide pan, heat 3 tbsp ghee over medium heat. Add the almonds, pistachios, and raisins. Fry for about 60 seconds, stirring constantly, until the nuts are lightly golden and the raisins plump up. Remove and set aside — watch closely, they burn FAST.
Toast the vermicelli: In the same pan (with the leftover ghee), add the crushed vermicelli. Toast over medium heat for 5–6 minutes, stirring constantly, until the strands turn a warm golden-brown and smell nutty. DO NOT walk away — this is where the flavor happens.
Add the syrup and butter: Pour the hot sugar syrup into the toasted vermicelli (it will sizzle dramatically — that's what you want). Add the 3 tbsp butter and ⅓ tsp ground cardamom. Stir gently to combine.
Simmer: Cook on medium heat for 6–7 minutes until all the water is absorbed or evaporated. Do not over-stir — you want the strands to stay whole.
Rest, covered: Turn off the heat. Cover the pan tightly and let it rest for 5 minutes. This step is NON-NEGOTIABLE — the residual steam finishes cooking the vermicelli and separates the strands.
Garnish and serve: Transfer to a serving dish and top generously with the fried almonds, pistachios, and raisins. Serve warm.
Notes
Use the right vermicelli. Fine South Asian seviyan (labeled "Roasted Vermicelli") is what this recipe is built for. Ahmed Foods, National, and Shan all work well.
Thicker vermicelli? Add ½ cup more water and cook for an extra 5 minutes on low heat, covered, until tender.
For a richer version, crumble ½ cup khoya into the pan when you add the fried nuts at the end. Traditional for Eid, but makes the dish heavier.
Storage. Keeps 2–3 days covered in the fridge. Reheat gently with a splash of water in the microwave or a covered pan on low.
Fish out whole cardamom pods and cloves before serving if you're serving to kids or guests who might bite into one.
