Mini Croissant Sandwiches

Description

These mini croissant sandwiches are so easy and versatile! Great for gatherings or quick meals, they’re light, delicious, and full of flavor with endless filling possibilities.

Ingredients
 

Scrambled Egg & Cucumber Sandwiches

  • 3 eggs
  • 1 small cucumber sliced
  • 3 tbsp butter or olive oil
  • tsp black pepper
  • tsp salt
  • 3 mini croissants

Sweet/Fruit Sandwiches

  • 2 bananas frozen or fresh
  • ½ cup blueberries
  • ½ tsp cinnamon
  • 3 mini croissants

Avocado & Pickled Cucumber Sandwiches

  • ½ cup mixed salad leaves
  • 1 large avocado
  • cup olives your choice
  • 1 tbsp pickled onions
  • 1 ½ tbsp feta cheese
  • pickled cucumber sliced
  • 4 mini croissants

Instructions

Prepare the Fillings

  • Scrambled Eggs: Melt butter (or heat olive oil) in a pan. Scramble eggs and cook until done. Set aside.
  • Fruit Mixture: Mash bananas and blueberries together in a small bowl. Mix in cinnamon and set aside.
  • Avocado Spread: Mash avocado until smooth. Slice pickled cucumber and set both aside.

Slice Croissants

  • Using a small knife, slice each mini croissant open, leaving one side attached to create a pocket.

Assemble the Sandwiches

  • Sweet/Fruit: Fill 3 croissants with the fruit mixture. Garnish as desired.
  • Scrambled Egg & Cucumber: Fill 3 croissants with scrambled eggs and cucumber slices. Sprinkle with salt and black pepper.
  • Avocado & Pickled Cucumber: Fill 4 croissants with salad leaves, avocado spread, pickled cucumber, pickled onions, and garnish with olives or feta cheese.
