½cupmixed salad leaves
1large avocado

Instructions
Prepare the Fillings
Scrambled Eggs: Melt butter (or heat olive oil) in a pan. Scramble eggs and cook until done. Set aside.
Fruit Mixture: Mash bananas and blueberries together in a small bowl. Mix in cinnamon and set aside.
Avocado Spread: Mash avocado until smooth. Slice pickled cucumber and set both aside.
Slice Croissants
Using a small knife, slice each mini croissant open, leaving one side attached to create a pocket.
Assemble the Sandwiches
