How to Make Date Pesto

Tips for the BEST Date Pesto
Use desi ghee if you can. It gives the pesto a richer, deeper flavor that coconut oil just can't match. That said, coconut oil is a perfectly good alternative (and it adds its own subtle sweetness).
Adjust the sweetness. Not all dates are created equal. Some are SUPER sweet, others are milder. Taste as you go and add more or fewer dates depending on your preference.
Control the texture. If you like a smoother spread, grind more of the nuts into a fine powder. If you want it chunkier, leave more pieces coarse. There's no wrong way to do this.
